CrockPot Chicken Cacciatore
After this dish was done, I noticed the sauce was thinner than I expected. It wasn’t until a few days later when I looked at the recipe again that I noticed I forgot the final step (adding cornstarch to thicken the sauce). The dish tasted very good, but the next time I make this I’ll make sure not to forget the final step.
I only used 1.5 pounds of chicken instead of 3-4 pounds like the recipe calls for. Also, I shredded the chicken with a knife and fork before serving (since it had been cooking for a long time in the CrockPot, the meat easily fell apart). Served over brown rice.

CrockPot Moroccan Lentil Soup
I made this using my homemade chicken stock instead of the vegetable broth it called for. This dish tastes divine with Greek yogurt. Served over brown rice.

Chana Masala
This is the second time I’ve made Chana Masala. This time around, I used coconut oil while cooking the onions, garlic, and spices, and it definitely made a difference in the taste of the finished product. (I used olive oil cooking spray the first time and the taste isn’t nearly the same.) I didn’t add any lemon. Served with brown rice and Greek yogurt. This dish is very, very good.
