Yum-Yum Fish and Polenta

On her blog, my sister calls this dish “Fish Stew with Polenta,” but when she sent me the recipe a few months ago, she called it “Yum-Yum Fish and Polenta” — so that’s what I’m going with.

Verdict? It’s just as delicious as she said it would be. I would definitely make this again. (And I love how colorful it is!) I had this for dinner with the recommended polenta, but after that ran out, I had the rest of the leftovers with brown rice.

Changes: 1) Used a regular onion instead of shallots; 2) Didn’t have a fennel bulb, so I substituted with fennel seeds; 3) Used cod for the fish; 4) Used regular polenta instead of instant, flavored with my homemade chicken stock.
