Breakfast: 2 hard boiled eggs, 1 Coleman Naturals chicken sausage
Lunch: Leftovers – Braised cabbage (from last night’s dinner) mixed with leftover taco meat (from yesterday’s lunch)
I had never had this combination before and wasn’t sure how it would turn out, but I really liked it. The cabbage reminded me of noodles — it would make a good pasta substitute!
Snacks: Zucchini and squash (leftovers from last night’s dinner); 3 small carrots; handful of blueberries

This was my first time making rice from cauliflower. It’s very simple; it just requires some advance prep.
Chop a head of cauliflower into florets. Transfer to a food processor and pulse until the cauliflower is a tiny rice-like size.
At this point, you can steam the cauliflower in a covered container in the microwave, or cook it on top of the stove (I cooked mine on the stovetop with a little bit of coconut oil, salt and pepper).
Dinner was simple tonight, but I spent additional time in the kitchen prepping the ingredients that will go in tomorrow’s CrockPot. I like to have as much as possible done the night before so I can throw everything in before I leave for work in the morning.
I also soaked and dried a bundle of kale using these instructions. This was the first time I’ve ever purchased it! I’m looking forward to trying it out sometime this week.
