Whole30, Day 3

I took virtually the same food to work today that I did yesterday, but I was hungrier today than I expected. I know our appetites can vary day to day so I need to make sure I’m bringing enough food to keep me satisfied, just in case.

I wasn’t in the best mood, either. I felt irritated whenever someone asked me a question. I’m not sure if my mood can be blamed on my dietary changes or if I just didn’t want to be at work, but I’ve heard the first few weeks on this eating plan are the most difficult. (However, since I had already cut out gluten, sugar, and caffeine from my diet, I didn’t think I’d have as much of an adjustment period.) I feel a little better now that I’m home but I’m still not very talkative.

On the bright side, dinner was delicious!

Breakfast: 2 hard boiled eggs, 1 spicy chicken sausage (same as yesterday)

Lunch: Leftover chuck roast mixed with more braised cabbage (I can’t believe I’ve just recently discovered this method of cooking cabbage. It’s really good!)

Snacks: Zucchini and squash; handful of blueberries

Dinner: CrockPot Pork Ragu served over Cauliflower “Rice.” The only modification I made was leaving out the splash of red wine, but I didn’t notice a difference in the finished product (it tasted just as good as it did the first time I made it).

Paul and I consumed two servings each and there was still a large amount remaining in the CrockPot. I love leftovers!
