Whole30, Day 10

Tonight was taco night! Paul loves tacos. I know for a fact that he gets just as (if not more) excited about them than something I’ve expended much more effort preparing.

In fact, if Paul doesn’t get tacos on a regular basis, he turns into BEAR-HEAD PAUL. (I love my boyfriend because he does random stuff like this all the time. And he let me take this photo knowing it would likely wind up on the internet.)

Bear-Head Paul

At least I always know what to make if I’m looking for something simple that both of us will like.

Usually when I make tacos I just add the seasoning to the beef and serve the meat that way, but I decided to bulk it up this time by adding chopped onions and a bell pepper.

While Paul ate his taco fixings in crunchy shells, I made a taco salad. The bottom layer was shredded braised cabbage (love that stuff!), then the beef mixed with homemade taco seasoning, chopped onion, and an orange bell pepper, salsa, and guacamole (a simple mix of an avocado, lemon juice, sea salt, and pepper).

Very good. I didn’t miss the shell at all.

Whole30, Day 10

Breakfast: 2 hard boiled eggs, a filet of baked salmon, cucumber salad

Lunch: Coconut Curry Chicken Stir-Fry with kelp noodles (the last of Sunday night’s dinner)

Dinner: Taco Salad

  1. Is it okay to think that bear headed Paul is pretty cute? Also, I like the compromise of you sticking to your plan while Paul makes modifications but mostly sticks to the plan too. What does he end up eating for lunch? Does he also pack lunches?

    • Hey, you’re a happily married lady and a personal friend of mine, so yes, it’s totally fine to think Bear-Headed Paul is cute. I happen to think so, too!

      Sometimes Paul will take dinner leftovers for lunch, but not very often. He works right in DC with all kinds of food options around, so he buys his lunch pretty much every day. I’ve tried to encourage him to purchase sandwich ingredients and make his own to save money, but this is what works for him right now. He’s made a lot of positive changes in his eating habits since we moved in together, so I’m happy. :)
