Whole30, Day 22

Today is Paul’s birthday! I’m glad his parents are here to help celebrate. I made breakfast for the three of them (eggs, sausage, English muffins) and an adapted version for myself.

Breakfast: Scrambled eggs, 1 sweet potato (with salt, cinnamon, and 1 tsp coconut oil), 1/2 of an avocado (same as yesterday)

We spent a few hours hanging out on the balcony, talking and reading. The sky was cloudy but the temperature was mild again, so it was comfortable.

I also filled a CrockPot with ingredients for Cajun Chicken and Shrimp Creole. I knew we wouldn’t eat it later that day because we planned to go out to dinner for Paul’s birthday, but it will be great to take for work lunches next week.

Lunch: Sweet potato (yes, another one!) with broccoli

In the afternoon we went to Paul’s softball game. Unfortunately, they lost by one run but it was still fun to watch.

Dinner: We had Paul’s birthday dinner at Station 4. I ordered the roasted chicken with yucca. We ate outdoors because the weather was so nice. Here’s a shot of me and Paul’s mom while we were waiting to be seated at our table…

We stopped by Safeway for a birthday cake and ice cream on our way home. It looked pretty inviting, but I stayed true to the Whole30 (only a little over a week left!).
