Weekly Meal Plan: Oct 8-14, 2012

Monday: CrockPot Pumpkin Turkey Chili

Yes, I’ve made this chili quite a few times. Yes, there’s a good reason for that! Quick, simple, delicious.

Tuesday: Leftovers

Wednesday: CrockPot Cajun Chicken and Shrimp Creole

Thursday: Leftovers

Friday: Taco-Seasoned Beef

Paul had his beef in taco shells; I ate mine plain, mixed with some salsa and a sprinkle of cheddar cheese.

Saturday: Richmond
Paul and I spent Friday night through early Sunday afternoon at my sister Elissa’s house in Richmond. We went to the annual Folk Festival for a good part of Saturday afternoon (where I also got to catch up with my mom). It was a lot of fun and a gorgeous day to spend outside.

(It was so sunny that when I sat on the ground to listen to music, I used my coat to shade myself.)

For dinner that night, I helped Elissa put together a dinner of roasted chicken and ratatouille. Delicious!

Sunday: Turkey Burgers
It took us over two hours to drive back from Richmond on Sunday, and since we made a few stops (grocery store, dropped off my car for an oil change), it was early evening before we got home. I mixed up a quick dinner of turkey burgers (no buns for me) and Paul cooked them. Always nice to have help in the kitchen!
